Vegan Fried Oysters (mushrooms, that is...) This is an excellent tasting substitute for breaded and fried white
fish meat. Start by cleaning fresh oyster mushrooms (you can often find
oyster mushrooms in big grocery stores). For every pound of mushrooms,
put about a cup of flour in a plastic bag, and mix in spices such as marjoram,
basil, thyme, and ground pepper. Throw the mushrooms into the bag, twist
the top, and give it a good shaking. The mushrooms will be coated nicely
with the flour-spice mixture. Transfer the mushrooms to a hot skillet that
has plenty of cooking oil. Brown them on both sides, then put them on a
paper towel to drain. Add salt, lemon juice, or soy sauce to taste. They
usually don't make it to a real plate for us -- we eat them off the paper
towel!
